The Memory of Taste

The landscape of Asturias, humanised by centuries-old agricultural activities, creates and gives birth to the raw material that has given traditional Asturian cooking its international reputation, making it the basis for the concepts of contemporary Asturian cuisine, which, according to some world-famous Spanish chefs, has shown the greatest amount of growth and development in recent times.

The County of Camín Real de la Mesa is one of the main destinations for some of the Principality’s traditional icons – the carnes roxas (or red meats) from the infamous Asturiana de los Valles breed, which feed on the pastures of our summer and winter grazing lands; the Afuega’l Pitu cheeses, rooted in an ancestral tradition; fresh produce from some of the best orchards and gardens and the most fertile lowlands of Asturias; ancient spelt (Triticum Spelta) bread recipes; cured meats used in age-old fashion in the Pote and Fabada (two traditional Asturian stews), along with desserts full of sweet wisdom.
